Cheese-making workshop with Yorkshire Dama Cheese Company at Darley Street Market.

About

Join multi award-winning local cheesemonger, Razan Alsous, founder of the Yorkshire Dama Cheese Company and the halloumi brand 'Squeaky Cheese', for a fun, hands-on workshop making two fresh cheeses: squeaky-soft halloumi cheese and creamy ricotta. In this interactive class, you’ll learn the secrets behind these fresh cheeses. Start by crafting halloumi from milk to magic, creating that iconic bouncy texture and satisfying squeak. Then, turn the whey into fluffy, creamy ricotta, using all traditional methods.

Enjoy pan-frying halloumi to golden perfection and top your ricotta with honey and enjoy a cheese feast with your fellow cheesemakers! Perfect for food lovers, or anyone curious about cheese science, this workshop is equal parts educational and delicious. You’ll leave with your own handmade cheeses, and the skills to make more at home. Just bring your curiosity and appetite!'
